Before we talk about his Vegas restaurants, for those who don’t know him, let’s start by saying a few words about Bobby Flay – who is he?

Flay is a renowned celebrity chef, restaurant owner, television personality and author.

After leaving school at 17, he learned his trade working in various kitchens, quickly getting noticed due to his natural talent.

This allowed him to gain admission to the French Culinary Institute in New York, and following his graduation, he found work as a chef and then executive chef in several different restaurants.

In 1991, he was appointed executive chef at Mesa Grill in New York where he quickly became a partner. After this, Flay went on to open further restaurants himself, including other Mesa Grills in Las Vegas and the Bahamas.

In 2008, he opened the first branch of Bobby’s Burger Palace in Long Island. Due to the success of this venture, he was able to open more outlets in other parts of the country, and at one point, 19 branches were in operation – although now only three remain.

As well as owning restaurants, Bobby Flay has appeared in many popular TV shows, including The Flay List, Iron Chef America and Beat Bobby Flay, all on Food Network. He has also authored a number of cookbooks.

Bobby Flay’s name is currently attached to four Las Vegas restaurants, Shark by Bobby Flay, Amalfi by Bobby Flay and two branches of Bobby’s Burgers, the successor to Bobby’s Burger Palace (with another opening soon) – so now let’s have a look at each of these in more detail.

Description

Replacing the branch of Bobby Flay’s popular Mesa Grill that was located in Caesars Palace is the chef’s latest restaurant concept, an Italian dining experience inspired by Italy’s impossibly romantic Amalfi Coast.

Fish is prominent in the cuisine of Amalfi, and there’s no shortage of fish or shellfish on the restaurant’s menu either. There’s even an extensive fish and seafood display staffed by an expert fishmonger who is there to answer guests’ questions and provide recommendations.

However, this being an Italian restaurant, you’ll also find a wide range of pasta dishes as well as a selection of irresistible Italian desserts.

The restaurant also features a lounge and bar area with warm lighting and comfortable furnishings, the perfect place to sit and drink a cocktail or a Campari Spritz, a specialty of the house.

A meal in this restaurant might not come cheap, but if you’re looking for top-quality Italian with a modern and creative twist, this is undoubtedly the place for you.

Menu highlights

The varied antipasti – or entrées – include delectable treats such as:

  • Shellfish fritto misto with Meyer lemon aioli and pistachio pesto
  • Roasted butterflied prawns with oreganata and lemon
  • Charred octopus with burnt orange and pancetta

For your primi piatti – first courses – choose from dishes such as:

  • Squid ink fettuccine with lobster, shrimp, squid and fra diavolo sauce
  • Gnocchi al forno with salsa rosa and fontina Parmigiano Reggiano cheese
  • Scialatielli with scampi sauce and basil

When it comes to mains, there’s a wide range of fresh fish to choose from, some of which are brought in fresh straight from the Mediterranean. Highlights include swordfish, snapper and bass.

If you don’t want fish, there are other meat or vegetarian options like jidori chicken al forno, a choice of steaks and several lovingly prepared salads. And of course, it wouldn’t be Italian without a range of contorni – side dishes – such as white bean risotto and crispy potatoes.

To finish, the restaurant offers several creative takes on Italian desserts, such as caramel espresso tiramisu and Bobby’s pistachio sundae, so those with a sweet tooth will also find something to satisfy their cravings too.

  • Opening times: Sun-Thu – 11am-12am; Fri & Sat – 11am-1am
  • Reservations: Not required

Description

Despite being a renowned gourmet chef, Bobby Flay’s first love is none other than the good old American hamburger – so in true Bobby Flay style, he decided to open his own burger joint to showcase this beloved all-American classic.

The original version of this restaurant was called Bobby’s Burger Palace, but recently, he created a more refined version – simply named Bobby’s Burgers – where diners can enjoy unpretentious and affordable American food of exceptional quality.

Inspired by his culinary travels around the US, Flay refers to this restaurant as “a very American concept”, and the items you’ll find on the menu reflect this ideal.

Currently, there are two branches of Bobby’s Burgers in Vegas, with one located in the Forum Food Hall in Caesars Palace and the other found in the Fulton Street Food Hall in Harrah’s. A third Las Vegas location is due to open soon in the Paris resort.

Another branch also operates at New York’s Yankee Stadium, although this one is open during games and events only.

Menu highlights

The menu at Bobby’s Burgers is much as you would expect, featuring a range of offerings that take the humble burger and elevate it to a work of culinary art.

All burgers include beef patties made of certified Angus beef. You’ll be able to find all your favorite classic versions, but also look out for:

  • The Bobby Blue + Bacon Burger (with blue cheese)
  • The BBQ Smokehouse Burger (with bacon, crispy onion, chipotle BBQ sauce and American cheese).

There’s also a fried chicken sandwich incorporating a succulent piece of chicken breast, or for those not eating meat, Bobby’s Veggie Burger is a great alternative.

To finish the meal, add a side of bacon and cheese fries, buttermilk onion rings or a portion of sweet potato fries – and then wash it all down with a delicious shake. Flavors include vanilla bean, dark chocolate, cookies and cream and pistachio.

  • Where: Palms Casino Resort
  • Opening times: Sun, Tue-Thu, 5pm-9.30pm; Fri & Sat – 5pm-10pm; Mon – Closed
  • Reservations: Temporarily closed

Description

Located in the luxurious and exclusive Palms Casino Resort, Shark by Bobby Flay is the celebrity chef’s first seafood restaurant, and it describes itself as serving “seafood-focused cuisine with a Latin beat”.

Unsurprisingly, a range of delicacies and delights from the ocean feature prominently on the menu, but other options are also served.

The dishes in Shark don’t adhere strictly to any specific style of cooking, but they draw heavily on influences from South America and Mexico – as well as on the culinary traditions of places as varied and diverse as the Mediterranean and Japan.

While the food from some parts of the world is known for the use of strong and almost overpowering ingredients, the philosophy of Shark is that big flavors are incorporated “for accent and not for injury”.

In other words, you can expect to find dishes that combine chili and pungent spices, but these ingredients are employed not to dominate the dish but to create balance.

The result is a kind of fusion cuisine that stands out from the rest through its elegance and finesse rather than its brashness and intensity.

Menu highlights

Shark’s signature dishes include:

  • Octopus with clementine, gooseberries, bacon and Marcona almonds
  • Shrimp escabeche with green onion dressing
  • Sea scallops with mustard green salsa verde, panca chili and cotija

Other highlights to look out for are:

  • Roasted salmon on banana leaf with yellow chili ponzu dressing
  • Tuna tartare with crispy green rice and Peruvian chili sauce
  • Black squid noodles with cherry tomato butter, blue crab and Calabrian chili

The restaurant also serves ceviche, sushi and sashimi. Options include:

  • Bluefin tuna ceviche with serrano chili, avocado and cilantro
  • Sushi rolls
  • Sea urchin sushi or sashimi

Exciting taco options, which all come wrapped in homemade purple corn tortillas, include lobster and beef tenderloin.

You can order a whole grilled lobster or a fried chicken as an entrée to share, and there are plenty of choices for those who don’t want to eat meat too.
